Ingredients: 4 slices thick bacon, chopped 1/2 red onion, finely chopped 1 package (13 ounce size) potato gnocchi 1 cup chopped fresh Italian parsley 8 cherry tomatoes, halved 1/4 teaspoon salt 1/4 teaspoon freshly ground pepper grated Parmesan cheese, optional
Directions: Heat a skillet over medium heat. Add the bacon and onion and cook, stirring frequently, until the onion is soft, about 10 minutes.
Meanwhile, cook the gnocchi in boiling water as directed on the package. Drain, reserving 1/2 cup of the cooking water.
Add the reserved cooking water to the skillet. Cook, stirring constantly, for 3 minutes.
Add the parsley, tomatoes, salt, and pepper. Cook for 1 minute.
Add the drained gnocchi to the skillet. Toss to coat in the sauce. Serve immediately, sprinkled with Parmesan cheese.
