Ingredients: 6 pounds precooked ham with bone 1 jar apricot preserves 1/4 cup brandy 2 tablespoons balsamic vinegar
Directions: Remove the ham rind by running your thumb around the edge of the ham; insert thumb under the rind and pull, beginning from the widest edge.
Use a small sharp knife to cut through the rind around the shank, and then in a decorative pattern cut around the rind. Remove a layer of fat from the entire surface of the ham or make some light slashes randomly over the fat.
Place the ham in a deep baking dish. Combine the apricot conserve, brandy and balsamic vinegar and dollop over the ham.
Bake at 350 degrees for at least 45 minutes, or until heated through. Carve ham into thin slices. Serve with glace'd fruits tossed with a little seeded mustard and white wine, heated over low heat.
