Ingredients: ***Graham Cracker-Almond Crust*** 3/4 cup crushed graham crackers 1/2 cup roasted almonds, ground coarsely in food processor 2 tablespoons melted butter (or as needed) 1 teaspoon cinnamon 1/2 lemon or lime, juiced ***Filling*** 1 pound fresh tofu 3/4 cup confectioners' sugar 3/4 cup oil 6 tablespoons cocoa powder 1 tablespoon vanilla extract 3/4 teaspoon soy sauce 1/2 shot Kahlua and/or amaretto and/or creme de cacao *** whipped cream amaretto
Directions: Mix almonds and crackers. Add melted butter, cinnamon and lemon or lime juice. Press into 8 or 9 pie pan. Bake approximately 15 minutes at 350 degrees F.
Blend all filling ingredients together in food processor until smooth. Pour over crust. Refrigerate a minimum of three hours. Top with whipped cream flavored with Amaretto.
