Ingredients: 1 cup sifted whole wheat flour 1 cup unprocessed bran flakes 2/3 cup raisins 1/3 cup chopped pecans 2 teaspoons baking powder 2 teaspoons baking soda 1/2 teaspoon salt 1 egg, beaten 3 tablespoons safflower oil 2 tablespoons honey 2 tablespoons molasses 1 teaspoon cider vinegar 1 cup milk
Directions: Preheat the oven to 425 degrees F. Line a muffin tin with muffin liners.
Combine the flour, bran flakes, raisins, pecans, baking powder, baking soda, and salt in a large mixing bowl. Mix well.
In another bowl, whisk together the egg, oil, honey, molasses, vinegar, and milk until smooth. While stirring, add the egg mixture to the flour mixture. Mix until just combined. The batter will be lumpy.
Fill the prepared muffin cups 2/3rds full with the batter. Place the muffin tin in the oven and bake at 425 degrees F for 15 minutes.
Remove the muffin tin from the oven and let cool for 5 minutes then remove the muffins to a wire rack to cool for 5 more minutes before serving warm. Store cooled muffins in an airtight container at room temperature.
