
100% Whole Wheat No Oil Pizza Crust

2 1/4 cups whole wheat flour
1/4 cup wheat gluten
1 envelope rapid rise yeast
1 teaspoon sugar
1 teaspoon salt
1 1/4 cup warm water
Combine all the ingredients in the bread machine in the order directed by the machine manufacturer.
Remove the dough after the first knead. Place on a lightly floured work surface and cover lightly with a towel. Let rest for 15 minutes.
Spread the dough out on a pizza pan, working it with your fingers to stretch it.
To use the crust: top with desired sauce and toppings and bake in a preheated oven at 450 degrees F for 15-20 minutes.
To prepare the dough without a bread machine, simply mix all the ingredients and then knead for 20 minutes by hand.
