
Amish Peanut Butter Cookies

1 cup granulated sugar
1 cup brown sugar
1 cup butter, at room temperature
1 cup shortening
1 cup peanut butter
2 eggs
2 teaspoons baking soda
1/2 teaspoon salt
3 cups all-purpose flour
1 teaspoon vanilla extract
Preheat the oven to 375 degrees F.
Combine the sugar, brown sugar, butter, and shortening in a mixing bowl. Beat on medium speed with an electric mixer until creamy. Beat in the peanut butter.
Add the eggs and mix well.
Combine the baking soda, salt, and flour in another bowl. Mix well. With the mixer running, slowly add the flour mixture to the creamed mixture. Mix in the vanilla.
Roll the dough into 1-inch balls and place 2 inches apart on a baking sheet. Dip a fork in sugar and flatten the cookie balls in a crisscross pattern with the fork.
Place the baking sheet in the oven and bake at 375 degrees F for 10-12 minutes.
Remove the baking sheet from the oven and let the cookies cool for 5 minutes then transfer to a wire rack to cool completely. Store the cookies in an airtight container.
