
Extra Light and Fluffy Pancakes

1 cup sifted pastry or cake flour
1/8 teaspoon salt
1/2 tablespoon baking powder
2 egg yolks
0.66 cup milk, plus more as needed
4 tablespoons butter, melted
2 egg whites
1 tablespoon sugar
In a large bowl, mix together the sifted flour, salt, and baking powder.
In a small bowl, whisk together the egg yolks, milk, and melted butter.
Make a well in the dry ingredients and pour in the milk mixture. Stir just until the batter is combined.
In a clean bowl, whip the egg whites until soft peaks form. While whipping, add the sugar.
Fold the egg whites into the pancake batter. Add additional milk if needed for the right consistency (the batter should be a little thick but still pourable).
Heat a greased skillet over medium heat. Add the batter to the skillet using a 1/4 cup measuring cup. Cook the pancakes until bubbles form on the top. Flip the pancakes over and cook until done. Serve the pancakes hot with desired toppings.
