Baked Breaded Chicken Breast

Ingredients:
1 cup dried bread crumbs
4 boneless and skinless chicken breast halves, pounded to an even thickness
2 tablespoons olive oil
2 tablespoons butter
salt and black pepper, to taste

Directions:
Preheat the oven to 350 degrees F.

Place the breadcrumbs in a shallow dish. Roll each chicken piece in the crumbs, pressing the crumbs so they adhere.

Heat the olive oil and butter in a large oven-proof skillet over medium heat. Add the chicken and cook 2 minutes per side. Season the chicken with salt and pepper as desired.

Place the skillet in the oven and bake the chicken for 7-10 minutes or until the chicken is cooked through (and juices run clear when pierced with a fork).

Serve hot.
