
Gluten Free Rice Stuffing

1/2 cup margarine
2 1/2 cups instant rice
2 cups chopped celery and celery leaves
1/2 cup chopped onion
4 cups water
1 teaspoon poultry seasoning
1 teaspoon ground sage
1 tablespoon salt
1/8 teaspoon black pepper
1/4 teaspoon dried rosemary
1/4 teaspoon dried marjoram
1/4 teaspoon dried thyme
1 1/2 cup crushed gluten free corn flake cereal
Melt the margarine in a saucepan over medium-high heat. Add the rice, celery, and onion. Cook, stirring frequently, until the rice is lightly browned.
Add the water, poultry seasoning, sage, salt, pepper, rosemary, marjoram, and thyme. Bring to a boil then cover the pan and remove from the heat. Let stand for 4 minutes.
Stir the cereal into the stuffing and let stand for 1 minute. Fluff with a fork. Let cool before stuffing the turkey.
8 cups of stuffing will stuff a 12 pound turkey.
