
Fake Alfredo Sauce

1 cup lowfat cottage cheese
1 cup nonfat plain yogurt
2 teaspoons crushed garlic
1 teaspoon lemon zest
1/8 teaspoon freshly ground black pepper
2 tablespoons grated Parmesan cheese
1 teaspoon chopped fresh parsley, optional
Combine the cottage cheese, yogurt, and garlic in a blender or food processor and process until smooth. Transfer the mixture to a bowl.
Stir the lemon zest and black pepper into the cottage cheese mixture. Mix well, cover the bowl lightly with plastic wrap and let sit at room temperature for 30 minutes.
Stir the Parmesan and parsley (optional) into the sauce and serve over hot cooked pasta or use in another recipe.
