Ingredients: 1/2 cup raw cashews 2 teaspoons vegetable oil 1 small onion, chopped 2 cloves garlic, finely chopped 4 boneless, skinned chicken breast halves, cubed 1 cup broccoli florets 1 cup reduced-sodium chicken broth 2 tablespoons soy sauce 2 teaspoons cornstarch 1/4 teaspoon salt 1/4 teaspoon black pepper
Directions: Lightly brown nuts in oil in large nonstick skillet over medium heat, about 3 minutes. Remove with slotted spoon.
Saute onion and garlic in skillet 2 minutes. Add chicken; saute until golden brown, about 8 minutes. Add broccoli, 3/4 cup broth and soy sauce. Simmer, covered, 5 minutes.
Dissolve cornstarch in remaining 1/4 cup broth; stir into skillet. Simmer, stirring, over medium heat until thickened. Boil 1 minute. Return cashews to skillet with salt and pepper.
