
Breakfast Monster Cookies

6 eggs
1 cup butter
2 cups brown sugar
1 1/2 cup honey
1 tablespoon vanilla extract
1 jar (18 ounce size) peanut butter
1 cup dry milk powder
4 teaspoons baking soda
9 cups old fashioned oats
1 cup golden raisins
1 cup chopped dates
1 package (6 ounce size) chopped mixed dried fruit
1 bag (12 ounce size) chocolate chips (optional)
Preheat the oven to 350 degrees F.
In a large mixing bowl, combine the eggs, butter, brown sugar, honey, vanilla, and peanut butter. Beat on medium speed with an electric mixer. Add the dry milk powder and baking soda and mix for 3 minutes.
Stir in the remaining ingredients by hand.
Drop the cookie dough by tablespoons onto ungreased baking sheets. Flatten the cookies to 3/4-inch thick using the bottom of a glass dipped in water.
Place the baking sheets in the oven and bake at 350 degrees F for 20-25 minutes or until browned. Do not overbake.
Remove the cookies from the baking sheet and let cool on wire racks.
Store the cookies in an airtight container at room temperature for up to 1 week or freeze.
