Ingredients: ***Cookies*** 1 package (12 ounce size) peanut butter chips 2 cups unbleached all-purpose flour 3/4 teaspoon salt 1/4 teaspoon baking soda 1 cup butter or margarine, softened 3/4 cup brown sugar, firmly packed 1/3 cup granulated sugar 1 egg, beaten 1 teaspoon vanilla extract ***Peanut Butter Filling*** 1/2 cup peanuts, finely chopped 3 teaspoons honey 2 teaspoons milk 1/4 teaspoon ground cinnamon 2/3 cup peanut butter chips
Directions: Preheat the oven to 350 degrees F.
Cookies: Melt the peanut butter chips according to package directions; set aside.
In a small bowl, combine the flour, salt and baking soda and set aside.
In a large mixing bowl, combine the butter, sugars, egg and vanilla. Beat on medium speed of electric mixer until creamy. Blend in the melted peanut butter morsels. Gradually add the flour mixture.
Shape into 1-inch balls and place 2 inches apart on ungreased cookie sheets.
Prepare Peanut Butter Filling: Combine the chopped peanuts, honey, milk, and cinnamon in a small bowl, blending well. Stir in the peanut butter chips.
Press the center of each cookie with your thumb, making an indentation, and fill with 1/4 tsp of the peanut butter filling mixture.
Bake for 8 to 10 minutes, or until lightly browned and batter starts to set. Remove from oven; let rest for about two minutes before removing cookies from baking sheet to cool.
