Ingredients: 6 hard-cooked eggs, peeled 1/4 cup mayonnaise 1 can (4 1/4 ounce size) shrimp 2 tablespoons green onions, chopped 1 tablespoon fresh dill weed, chopped 1/8 teaspoon black pepper 2 teaspoons country-style dijon mustard 1 tablespoon lime juice 1/4 teaspoon hot pepper sauce Fresh dill weed sprigs
Directions: Cut eggs crosswise in half. Remove the yolks from egg whites; set the egg whites aside.
Rinse and drain the shrimp. Reserve 12 shrimp for garnish. Chop remaining shrimp.
Place cooked egg yolks in medium bowl; mash with fork. Mix in the mayonnaise. Add the chopped shrimp, green onion, chopped dill, pepper, dijon mustard, lime juice, and hot pepper sauce; mix well.
Spoon about 1 tablespoon egg yolk mixture into each egg white; garnish each egg half with 1 reserved shrimp and sprig of dill. Cover and refrigerate until ready to serve.
