Ingredients: 1 1/2 cup picante sauce 3 tablespoons packed light brown sugar 1 tablespoon Dijon mustard 4 boneless, skinless chicken breast halves 3 cups hot cooked rice
Directions: Preheat the oven to 400 degrees F.
In a bowl or large measuring cup, whisk together the picante sauce, brown sugar, and mustard.
Place the chicken in a 2-quart baking dish. Evenly pour the picante sauce mixture over the chicken.
Place the chicken in the oven and bake at 400 degrees F for 20 minutes or until the chicken is cooked through (cook time will depend on the thickness of the chicken).
Remove from the oven. Serve the chicken and picante sauce mixture over hot, cooked rice if desired.
