Ingredients: 1 cup butter, softened 1 cup brown sugar, packed 1/2 cup sugar 1 egg, beaten 1 tablespoon lemon zest 2 tablespoons lemon juice 2 cups flour 1/4 teaspoon baking soda 1/2 teaspoon salt
Directions: Cream butter and sugars together until light and fluffy; blend in egg, lemon zest and lemon juice. Add flour, baking soda and salt; mix until just blended.
Divide dough in half; with floured hands; shape each half into a 10" long log. Wrap each in plastic wrap; refrigerate until firm. For gift giving, wrap each roll in foil, and again in printed fabric, if desired. Attach baking instructions to each roll.
Baking instructions: Store dough in refrigerator until ready to bake. Cut chilled roll of dough into 1/4" thick slices; arrange on greased baking sheets. Bake at 400 degrees F for 8-10 minutes; cool on a wire rack.
Note: Spruce up lemon slice cookies with whimsical patterns, found right in the kitchen. Use any utensil with a cut out pattern...cooking spatulas and potato mashers work great. Before baking, place the utensil on top of cookies and sprinkle colored sugar over top. Remove the utensil to show the cheery pattern.
