
Sag Aloo (Curried Spinach And Potatoes)

1 potato, peeled and diced
vegetable oil or vegetable ghee
1 onion, sliced
1 clove garlic, minced
1 teaspoon grated fresh ginger
2 cardamom pods
1/2 teaspoon fennel seeds
1/4 teaspoon ground cumin
1/4 teaspoon ground turmeric
1/2 teaspoon ground coriander
1/4 teaspoon chili powder
9 ounces fresh spinach
1/4 teaspoon salt
1 dash fresh lemon juice
1 tomato, cut in wedges, optional
Bring a pan of water to a boil over medium-high heat. Add the potato cubes and boil until they are almost cooked but still are a bit firm. Drain well.
Meanwhile, heat a thin layer of oil or ghee in a deep skillet over medium heat. Add the onion, garlic, ginger, cardamom, fennel seeds, cumin, turmeric, coriander, and chili powder. Cook, stirring frequently, until the onion is soft.
Add the potato cubes and spinach and reduce the heat to low. Stir in the salt, lemon juice, and tomato. Cook covered, stirring occasionally, for about 15 minutes or until the spinach is wilted and the potatoes are tender.
Serve hot.
