Ingredients: 3 cups vegetable oil 1 tablespoon sesame oil 1 package rice stick noodles (gently separated) OR 8 wonton wrappers 1 small carrot (peeled, then pared into shavings) 1 cup bean sprouts (roots removed) 1 stalk celery (trimmed, cut diagonally into pieces 1/2 inch thick) 2 green onions (chopped) 3 cups chicken (boned, cooked and shredded) 4 tablespoons Chinese spiced salad dressing 6 lettuce leaves (finely shredded)
Directions: Place the chicken in a large bowl and combine it with the spiced salad dressing.
Heat the oil in a wok to 350 degrees F on a frying thermometer and fry the noodles until they are crisp and pale brown. Remove noodles with a slotted spoon and drain on paper towels.
Add the green (spring) onions, carrot shavings, bean sprouts and celery to the chicken and toss everything together lightly. Sprinkle with the sesame oil.
Arrange the shredded lettuce to form a bed on a large platter. Spoon the chicken mixture on top. Scatter the fried noodles over the salad and serve.
