Ingredients: 8 poached eggs 4 English muffins, split 1 tomato, sliced 1 avocado, peeled and sliced alfalfa sprouts paprika ***HOLLANDAISE SAUCE*** 4 egg yolks 2 tablespoons lemon juice 1/4 teaspoon salt 1 dash cayenne pepper 1 stick melted butter
Directions: Poach eggs. Toast English muffins and place on individual plates, two per serving. On each muffin, layer sliced tomato, then poached egg, topped with sliced avocado.
HOLLANDAISE SAUCE: Whisk together egg yolks, lemon juice, salt, cayenne pepper. Place mixture in double boiler. Over hot water, slowly add the melted butter to the egg mixture while whisking constantly until sauce is thickened.
Pour hollandaise over muffin, vegetables, and egg. Sprinkle with paprika and garnish with alfalfa sprouts according to taste.
