
Whole Wheat Soft Pretzels

3 cups whole wheat flour, or as needed
1 envelope (.25 ounce size) quick-rise yeast
1 teaspoon salt
1 1/3 cup warm water (125 to 130 degrees F)
3 tablespoons vegetable oil
1 tablespoon honey
1 egg white, beaten
coarse salt, sesame seeds, everything bagel topping, poppy seeds, etc
Preheat the oven to 400 degrees F. Grease a baking sheet.
Combine 2 cups flour, the yeast, and salt in a large bowl. Stir in the warm water, oil, and honey. Mix until smooth. Stir in enough of the remaining flour to make a soft dough.
Lightly flour a work surface. Turn the dough out onto the work surface and knead for 5 minutes or until smooth and elastic (if the dough is too sticky add additional flour in 1 tablespoon increments).
Cover the dough lightly with a towel and let rest for 10 minutes.
Knead the dough for one minute then divide it into 12 equal sized balls. Roll each ball into a rope that is 18-inches long. Twist each rope into a pretzel shape and place on the greased baking sheet.
Brush each pretzel with the egg white and sprinkle with salt or other toppings.
Place the baking sheet in the oven and bake at 400 degrees F for 15 minutes or until golden brown. Remove from the oven and immediately transfer the pretzels to a cooling rack.
Serve the whole wheat soft pretzels warm with mustard or cheese sauce for dipping.
