Easy Shepherd's Pie

Ingredients:
1 pound ground beef
1 small onion, chopped
1 can (10.5 ounce size) cream of mushroom soup
1 can (15 ounce size) mixed vegetables, drained
1 clove garlic, minced
8 cups prepared mashed potatoes (from instant or homemade)
1 cup shredded Cheddar cheese

Directions:
Preheat the oven to 350 degrees F.

Heat a skillet over medium-high heat. Add the ground beef and chopped onion. Cook, stirring frequently, until the beef is cooked and the onion is soft. Drain off any excess grease.

Add the cream of mushroom soup, mixed vegetables, and garlic. Mix well.

Pour the beef mixture into a baking dish. Spread the mashed potatoes over the top to completely cover the meat. Sprinkle the potatoes with the shredded cheese.

Place the baking dish in the oven and bake at 350 degrees F for 30 minutes or until bubbly and the cheese is melted.
