
Cheesy Hash Brown Casserole

2 pounds frozen hash brown potatoes, thawed
3/4 cup butter or margarine, melted, divided
1 teaspoon salt
1 dash black pepper
1/2 cup chopped onion
1 can (10.75 ounce size) cream of chicken soup, condensed
2 cups shredded cheddar cheese
2 cups cornflake crumbs
Preheat the oven to 325 degrees F. Lightly grease a 9x13 casserole dish.
In a large bowl, combine the thawed hash browns, 1/2 cup of the butter, the salt, pepper, onion, soup, and cheese. Mix well and pour into the prepared casserole.
Sprinkle the top of the casserole with the cornflake crumbs and drizzle the remaining melted butter evenly over the top.
Place the casserole in the oven and bake, uncovered, for 1 hour at 325 degrees F or until bubbly in the middle and the top is light golden brown.
Serve hot.
