
Italian Chicken with White Wine Sauce - Chicken Vino Bianco

4 boneless and skinless chicken breast halves, sliced into strips
salt and pepper, as needed
2 tablespoons olive oil
1/2 cup finely chopped onion
2 cloves garlic, minced
2 cups sliced fresh mushrooms
1/2 cup white wine
1 cup chopped canned tomatoes, drained
1/4 cup heavy cream
2 tablespoons chopped fresh parsley
Season the chicken with salt and pepper, as desired.
Heat the oil in a non-stick skillet over medium-high heat. Add the chicken to the hot skillet and cook, stirring occasionally, until browned. Remove the chicken from the skillet with a slotted spoon and set aside.
Add the onion and garlic to the skillet and cook, stirring frequently, until tender. Add the mushrooms. Cook, stirring frequently, until browned and their juices released.
Add the wine to the skillet and bring to a simmer. Add the tomatoes and stir to combine. Let the sauce return to a simmer. Season the sauce to taste with salt and pepper.
Return the chicken to the skillet and stir it into the sauce. Cover the skillet and let the sauce simmer until the sauce begins to thicken.
Remove the pan from the heat and stir in the cream and parsley. Serve the chicken and sauce over your favorite pasta, rice, or as is.
