Serves/Makes: 2 loaves | Ready In: 2-5 hrs
3 cups water (warm for yeast proofing)
1 tablespoon sugar (for yeast proofing)
3 tablespoons yeast
3 teaspoons salt
4 tablespoons vegetable oil
1/2 cup sugar
8 cups flour
Mix yeast, sugar and warm water and let sit until foamed (proofed), add in the oil. Premix flour, salt and sugar adding to wet ingredients and knead very, very well. Coat with oil or butter and let it rise in a warm, covered bowl until doubled in size(about 1 hour).
Punch the dough down, divide into LOTS of small or two large loaf pans, and let it rise again, 1 hour.
For a nice finish use an egg wash before you put it in the oven (1 egg and about a cup of water, brushed lightly over top of loaves).
Bake at 350 degrees F for 35- 45 minutes. Delightfully sweet and soft.
Cook's Notes: Other than the waiting for it to rise, and bake, one of the easiest recipes I've ever had the pleasure of making for my restaurant.
