Ingredients: 2 cups all-purpose flour 1 1/3 cup sugar 1/2 teaspoon salt 1/2 cup butter or shortening, PLUS 1 tablespoon butter or shortening 1 3/4 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 1 cup buttermilk 2 large eggs
Directions: Preheat the oven to 375 degrees F. Grease a 9x13-inch baking dish.
Combine the flour, sugar, salt, and butter until the mixture forms coarse crumbs. Set aside approximately 1/2 cup of the mixture.
Add the baking powder, baking soda, cinnamon, and nutmeg to the remaining crumb mixture and mix well.
Stir the buttermilk and eggs and mix until the batter is smooth.
Pour the cowboy bread batter into the greased baking dish. Evenly sprinkle the reserved crumb mixture over the top. Place the bread in the oven and bake at 375 degrees F for 20 minutes.
Remove the bread from the oven and let cool in the pan. Store the cooled bread in an airtight container for up to 4 days.
