
Reese's Peanut Butter Cups

1 package (12 ounce size) milk chocolate chips
1 cup reduced-fat peanut butter
1/2 cup powdered sugar
1/4 teaspoon salt
Place the chocolate chips in a microwave-safe bowl. Place the bowl in the microwave and heat at 50% power for 2 minutes. Stir the chips until smooth. If the chocolate hasn't fully melted, cook them at 50% power for 15 second intervals, stirring well, until the chocolate is melted. Do not overcook the chocolate.
Place one teaspoon of the melted chocolate in the bottom of a paper muffin liner. Using the teaspoon, spread the chocolate evenly on the bottom and 1/2-inch up the sides. Place the paper liner in a muffin tin to help keep its shape. Repeat with the remaining paper liners. Place the muffin tin in the refrigerator to harden the chocolate.
Combine the peanut butter, powdered sugar, and salt in a microwave-safe bowl. Mix until uniform in color. Place the bowl in the microwave and heat on full power for 1 minute.
Spoon a small amount of the peanut butter filling into each hardened chocolate shell, leaving room for the top layer of chocolate. Return the muffin tin to the refrigerator to set the filling. Let it chill for 1 hour.
Reheat the remaining melted chocolate. Spread a layer of chocolate over the top of the peanut butter filling in each paper liner. Return the peanut butter cups to the refrigerator and let harden for 30 minutes.
When ready to serve, remove the paper liners from the peanut butter cups.
