
No Bake Fruit Cake

1 box vanilla wafer cookies, crushed
1 can sweetened condensed milk
1 box raisins
1 package coconut (7 or 12 ounce size)
1 jar red maraschino cherries, drained, save juice
12 ounces walnuts, chopped
2 teaspoons vanilla extract
1/2 teaspoon rum extract
Set aside the cherry juice. Mix all ingredients very well, hands work best. You may need to use some cherry juice to add a little moisture. Dough should be very stiff, it is not baked. Pack into a buttered bundt pan and freeze.
Slice with an electric knife into thin pieces. Freeze any not used. Makes probably 24 or more slices. Cake is very rich and you only need a little. Green and red cherries may both be used to give it more of a holiday look.
This is a wonderful no-bake holiday cake. It is expensive to make, but it is rich and you only need a thin slice for a serving. It freezes well and it is nice to have in the freezer for unexpected company. I make it ahead, freeze, slice and put back in the freezer. It is really rich, you only need a little piece. I HATE fruitcake, so this is a nice substitute.
Cook's Notes: Nice to keep on hand for unexpected holiday company. Keeps the whole holiday season in the freezer. Just wrap well.
