Ingredients: 1 cup liquid egg substitute 4 cups skim milk 1 package (4-serving size) sugar-free instant vanilla pudding mix 1/8 teaspoon salt 1 teaspoon vanilla or rum extract 1/4 teaspoon ground nutmeg
Directions: Place the egg substitute and skim milk in a blender. Process for 30 seconds on low speed.
With the blender running on low, slowly add the pudding mix through the feed tube. Add the salt, vanilla or rum extract, and nutmeg.
Cover the feed tube hole and blend for 2 minutes.
Transfer the eggnog to a pitcher (or leave in the blender container) and refrigerate for at least 2 hours before serving.
