
Dolly Parton's Christmas Sugar Cookies

1 cup sugar
2 cups butter, at room temperature
2 large egg yolks
3 cups sifted all-purpose flour
1 1/2 teaspoon grated lemon rind
Place the sugar and butter in a large mixing bowl. Beat on medium speed with an electric mixer until creamy and smooth. With the mixer running, add the egg yolks one at a time, beating well after each addition.
With the mixer running, slowly add the flour and lemon rind. Mix well but do not over mix the dough.
Cover the bowl and chill for 3 hours in the refrigerator.
Preheat the oven to 350 degrees F. Grease 2 baking sheets.
Roll the chilled dough out with a rolling pin. Use cookie cutters to cut into shapes and transfer the cookie dough cut-outs to the greased baking sheets. Place the baking sheets in the oven and bake at 350 degrees F for 8-10 minutes, or until the cookies are just lightly browned.
Remove the baking sheets from the oven and transfer the cookies to a cooling rack. Let cool completely, then decorate as desired or store in an airtight container at room temperature.
