Honey Apple Loaf

Ingredients:
1 1/2 cup honey
1 tablespoon almond extract
1/4 cup brewed strong coffee
1/4 cup oil
2 eggs
2 1/4 cups flour
2 1/2 teaspoons baking powder
1 teaspoon baking soda
3/4 teaspoon cinnamon
3/4 teaspoon ground allspice
1/4 teaspoon salt
2 cups peeled, chopped green apples
1/2 cup golden raisins

Directions:
Preheat oven to 350 degrees F. Grease and flour a 9 inch loaf pan.

Mix honey and almond extract and reserve 1/2 cup and set aside. Sift dry ingredients.

Combine wet ingredients. Make a well in the dry ingredients, add the wet ingredients and stir to mix well. Add apples and raisins and combine.

Place in the prepared pan. Bake about 1 hour or until tested done in center with toothpick. if browning to fast, tent with foil.

Remove from pan and slice when room temperature. Drizzle pieces with the reserved honey and almond mixture.
