Ingredients: ***Marinade Grill*** 4 whole chicken breast halves 2 lemons 2 whole limes 1 clove garlic, minced 1/3 cup olive oil 2 teaspoons salt ***Pasta*** 12 ounces angel hair pasta 1 teaspoon garlic salt 3 tablespoons Parmesan cheese, grated parsley, for garnish 2 tablespoons butter
Directions: For Marinade: In a bowl, grate the rind off of about half each of the lemon and lime rind, then squeeze full lemon and lime juice into the same bowl. Add salt, garlic, and olive oil and stir.
Pour into Ziploc plastic bag and marinate overnight, or at least 6 hours.
Prepare medium-hot grill. Grill chicken about six minutes per side, or until done all the way through. (Take care not to let chicken dry out on the grill. Add marinade halfway through but fully cook it off.) Warm serving platter in the oven on low.
Boil water. Boil angel hair briefly, for about 4 minutes until done. Remove from water, add pat of butter and a small amount of olive oil, plus garlic salt and Parmesan.
Cut up chicken and place on top of angel hair. Garnish with parsley. Serve immediately.
