
Missouri Mix (Quick Mix)

9 cups sifted all-purpose flour
1/3 cup double acting baking powder
1 cup nonfat milk, PLUS
2 tablespoons nonfat milk
4 teaspoons salt
1 3/4 cup vegetable shortening
OR
1 1/2 cup lard
Stir baking powder, dry milk, and salt into the flour. Mix well. Cut fat into flour mixture until all particles of fat are thoroughly coated and mixture resembles coarse cornmeal.
Use anywhere calling for biscuit mix.
