
Cucumber and Onion Salad

1 1/2 cup cucumber, sliced thin
1/2 cup onion, sliced thin
1/3 cup white vinegar
5 tablespoons vegetable oil
1/4 teaspoon salt
1 dash black pepper
1 1/2 teaspoon sugar
Alternate layers of cucumber and onion in a bowl.
In a measuring cup or small bowl, whisk together the vinegar, oil, salt, pepper, and sugar. Pour the mixture over the cucumbers and onions in the bowl.
Cover the bowl and place in the refrigerator for 8-12 hours. Stir several times while chilling.
Serve cold.
