
Gluten-Free Baking Mix

4 cups rice flour, finely ground
1 1/2 cup potato starch flour
2/3 cup tapioca starch
1 teaspoon xanthan gum, optional
Combine the flours, starch, and xanthan gum in a large bowl until well mixed.
Use in recipes in place of regular flour.
Store the baking mix in an airtight container for up to 2 months.
