Directions: Combine the instant tea drink mix, dry gelatin mix, sugar, and coconut extract in a food processor. Process for 30-45 seconds or until the ingredients are pulverized and powdery.
Transfer the tea mix to an airtight container and store in a cool, dry place.
To use the Caribbean tea mix, combine 2 tablespoons of the mix in a mug with hot or cold water and ice. Mix well and serve immediately. Garnish with a slice of orange or pineapple wedge, if desired.
