
Polynesian Ham

1 can (10 ounce size) pineapple chunks, drained, juice reserved
2 cups cooked ham, cut in matchsticks
2 tablespoons butter or margarine
3 tablespoons flour
2 tablespoons brown sugar
2 teaspoons prepared mustard
1/2 teaspoon salt
3/4 cup water
1 tablespoon vinegar
1/2 cup coarsely chopped celery
1/2 green bell pepper, sliced
1 can (15 ounce size) bean sprouts (or use fresh) or sliced mushrooms drained

In a saucepan, melt butter or margarine. Blend in a mixture of flour, brown sugar, mustard, and salt. Gradually stir in reserved pineapple juice,water, and vinegar. Cook stirring constantly until thickened.
Add drained pineapple and ham together with chopped celery and green pepper.
Bring to a boil, cover, reduce heat and simmer for 10 minutes or until vegetables are tender. Add sprouts or mushrooms. Serve with rice.
