Ingredients: 1/2 cup butter 3/4 cup mashed potatoes, at room temperature 1/2 teaspoon salt 2 pounds powdered sugar 3 cups sweetened shredded coconut 2 teaspoons vanilla extract ***Chocolate Coating*** 12 ounces semisweet chocolate chips 4 ounces unsweetened chocolate 1/2 cake paraffin wax
Directions: Melt the butter in the top of double boiler over boiling water. Blend in the potatoes, salt, sugar, coconut and vanilla. Mix well.
Spread in a buttered 9" x 13" pan. Chill to harden, then cut in squares.
Melt coating ingredients. Dip squares with a toothpick in coating. Set on wax paper to harden. Store in fridge or freezer.
