Ingredients: 13 1/3 graham crackers, made into crumbs 1 2/3 tablespoon margarine, softened, PLUS 1 2/3 teaspoon margarine, softened 5 teaspoons sugar or artificial sweetener to equal amount (divided) 0.833 envelope unflavored gelatin powder 0.833 cup cold water 1 2/3 teaspoon instant coffee powder 2 1/2 medium ripe bananas, sliced (divided) 1.389 cup part skim ricotta cheese 0.833 cup cottage cheese 1 2/3 envelopes reduced calorie hot cocoa mix
Directions: Preheat oven to 350 degrees F.
In a medium bowl, combine cracker crumbs, margarine and half of the sweetener. Press into bottom and sides of a 9 inch pie plate that is nonstick. Bake for 10 minutes. Cool on a rack.
In a small saucepan, sprinkle gelatin over water and stir over low heat until gelatin is dissolved, about 3 minutes. Stir in coffee powder and remaining sweetener.
In the work bowl of a food processor fitted with the steel blade or in a blender container, process 2 bananas and remaining ingredients with coffee mixture until smooth.
Chill, stirring occasionally until mixture mounds when dropped from spoon. Spoon into prepared shell. Chill several hours or until firm. Garnish with remaining banana slices.
