
Peanut Butter Banana French Toast Sandwiches

4 eggs
2 tablespoons water
1/4 cup creamy peanut butter
8 slices bread
2 ripe bananas
2 tablespoons butter or margarine
Preheat the oven to 200 degrees F.
Whisk together the eggs and water in a shallow dish.
Spread peanut butter on one side of each slice of bread.
Peel the bananas and cut in half. Cut each half into four lengthwise slices. On four of the peanut butter covered bread slices, place a single layer (4 slices) of banana. Top with the remaining bread slices, peanut butter side down.
Heat a large skillet over medium heat. Add half of the butter and swirl the pan to melt it.
In batches, dip both sides of the sandwiches in the egg mixture, coating it on all sides. Let any excess drip off. Place the sandwiches in the hot skillet and cook for 2-3 minutes per side or until golden brown.
Place the browned sandwiches on a baking sheet and place in the oven to keep warm while you prepare the remaining sandwiches.
If desired, sprinkle the French toast sandwiches with powdered sugar or drizzle with syrup. Serve hot.
