
Low-Fat Italian Oven Fried Chicken

2 boneless, skinless chicken breast
1 cup low-fat ranch salad dressing
2 teaspoons minced garlic
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup italian bread crumbs
3 tablespoons Parmesan cheese
non-stick cooking spray
Preheat oven to 350 degrees F.
Mix breadcrumbs and Parmesan cheese together. Set aside.
Mix low-fat ranch dressing, garlic, salt and pepper. Mix well. Marinade chicken breast in the dressing mixture. Marinate at least an afternoon.
Coat pan with a non-stick cooking spray. Remove chicken from marinade. Coat each piece with breadcrumb mixture.
Spray both sides with a non-stick cooking spray. Arrange in pan. Bake until done 45 min. - 1 hour.
