
Shrimp Or Crab Au Gratin

1/2 cup celery
1 cup sliced onion
1/4 teaspoon black pepper
1/2 cup flour
2 egg yolks
1 teaspoon salt
1 pound shrimp or crab meat
14 ounces evaporated milk
12 ounces grated Cheddar cheese
Saute onions and celery in butter until soft. Add flour to mixture.
Gradually add milk, stirring constantly. Add egg yolks and salt and pepper. Cook 10 minutes. Pour shrimp or crab into bowl and pour sauce over shrimp or crab. Place in greased pan and sprinkle with cheese.
Bake at 375 degrees F until hot.
