
Split Pea Comfort Soup

1 package (16 ounce size) dried green split peas, rinsed
1 ham bone
OR
2 cups diced ham
3 carrots, peeled & sliced
1 medium onion, chopped
2 stalks celery plus leaves, chopped
2 cloves garlic, minced
1 bay leaf
1/4 cup fresh parsley, chopped (optional)
1 tablespoon seasoned salt (or to taste)
1/2 teaspoon fresh black pepper
1 1/2 quart hot water
Place the split peas in the bottom of the crock pot. Top with the diced ham or ham bone, sliced carrots, onion, celery, garlic, bay leaf, and parsley. Sprinkle evenly with salt and pepper.
Gently pour in the hot water. Do not stir.
Cover the crock pot and cook on high for 4 to 5 hours, or on low for 8 to 10 hours, or until the split peas are very soft.
If using a ham bone, remove the bone and dice the ham. Stir the ham back into the soup. Remove the bay leaf before serving.
Serve the soup hot, garnished with croutons if desired.
