
Fruited Pork

2 pounds pork boneless loin roast
1 1/2 cup mixed dried fruit
1/2 cup apple juice
1/2 teaspoon salt
1/4 teaspoon black pepper
Place pork in 3-4 quart slow cooker and top with fruit. Pour apple juice over pork and sprinkle with salt and pepper. Cover crockpot and cook on low for 7-9 hours until pork is tender.
