
Black Bean and Cilantro Salad

3 cans (15 ounce size) black beans, canned, rinsed and drained
1 cup corn kernels, frozen or canned
1/4 cup tomatoes, diced
1/4 cup red bell pepper, diced
1/4 cup green bell pepper, diced
1/4 cup red onion, minced
1/2 cucumber, diced
1 teaspoon jalapeno chile peppers, minced, or to taste
1/3 cup olive oil, cilantro-flavored, if desired
2 tablespoons fresh lime juice
1/4 cup fresh cilantro, minced, optional
salt and pepper, to taste
In a large bowl, mix black beans, corn, tomatoes, bell peppers, red onion, cucumber, and jalapeno together. Drizzle with cilantro oil and lime juice, then toss. Sprinkle with fresh cilantro, if desired, and season to taste with salt and pepper, then toss again. Serve at room temperature.
