
Microwave Brownies

2/3 cup butter, at room temperature
1/2 cup sugar
1/2 cup packed brown sugar
2 large eggs, beaten
1 teaspoon vanilla extract
1 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1/4 teaspoon baking powder
1/8 teaspoon salt
3/4 cup chopped nuts
powdered sugar or frosting, if desired
Coat a 9-inch microwave-safe baking dish or pie plate with non-stick cooking spray.
Combine the butter, sugar, and brown sugar in a microwave-safe mixing bowl. Beat on medium speed with an electric mixer until combined. Add the eggs and vanilla and beat until blended. With the mixer running on low speed, add the flour, cocoa powder, baking powder, and salt. Mix until just combined - do not over mix the batter.
Stir the nuts into the batter by hand. Spread the batter in the prepared baking dish. Microwave on 100% power for 5-7 minutes or until a wooden toothpick inserted in the middle comes out clean. If the microwave does not have a turntable, rotate the baking dish 1/4 turn every 2 minutes.
Remove the dish from the microwave and cover with waxed paper. Let cool on a wire rack for 10 minutes. Remove the waxed paper and let the brownies cool completely before frosting or slicing. Store the brownies in an airtight container.
