Mom's Green Pea Salad
CDKitchen https://www.cdkitchen.com
Serves/Makes: 6 | Ready In: 2-5 hrs
1 can (15 ounce size) peas, drained
1/2 cup diced American cheese
1/2 cup diced onion
2 diced boiled egg
1 boiled egg quartered long way for garnish
1/2 cup Miracle Whip (increase as necessary)
salt, to taste
Mix all. Let stand for a minimum of two hours in the refrigerator.
Cook's Notes: Pea salad is something my mother makes almost every thanksgiving and Christmas to go along with the meal and subsequent "turkey sandwich days" that follow. It is very simple, but tasty. It is important that you let the salad stand in the refrigerator for at least an hour or so, otherwise, it will not taste right as the onions are the only thing that flavors the dressing. We always make it with Miracle Whip, but if you are one of those folks who despises the taste, you can substitute mayonnaise with 1-2 Tbsp. of sugar added.
