Ingredients: ***Marinade*** 1/4 cup lemon juice 1 tablespoon black pepper 1/2 cup olive oil 6 chicken breast halves ***Gremolata*** 1 tablespoon fresh thyme 2 cloves garlic, minced 1 teaspoon lemon zest
Directions: In a bowl whisk together lemon juice, pepper and salt to taste. Add oil in stream whisking until emulsified. Flatten chicken to 1/4 inch thick.
Marinate chicken in marinade for 30 minutes. Grill on oiled rack about 2 minutes per side.
For gremolata, mix remaining ingredients. Sprinkle over chicken just before serving.
