
Boboli Pizza Crust

1 package dry yeast
1/4 cup warm water, PLUS
2 1/4 cups warm water
6 tablespoons olive oil, + extra for pans
6 cups flour
1 teaspoon salt
***For Topping***
coarse sea or kosher salt
freshly ground black pepper
chopped fresh rosemary
chopped fresh thyme
Dissolve yeast in 1/4 cup warm water (105 degrees F is perfect) in a large bowl. Let it sit for two minutes.
Add the remaining water, olive oil, flour, and salt and mix well. Turn out onto board and knead for ten minutes. Place back in the bowl and cover with a damp towel and let rise 30 to 40 minutes.
Divide dough into 3 parts and place in 3 olive-oiled pie pans.
Dimple dough with fingers. Sprinkle the dough with salt, pepper, rosemary, and thyme (using amount as desired).
Let the dough rise another 50 to 60 minutes.
Preheat oven to 350 degrees F.
When the dough has risen, bake at 350 degrees F for 25 minutes or until done and just lightly browned.
Remove from oven and let cool for a few minutes before removing from the pans. Place the crusts on a rack to cool.
Use as a pizza crust or cut into slices and dip in olive oil like bread sticks.
