Ingredients: 2 packages (10 ounce size) frozen broccoli, florets or chopped 2 tablespoons water 1 can (8 ounce size) pearl onions, drained 1/4 cup cracker crumbs 1 can (10.5 ounce size) cream of mushroom soup, undiluted 1/3 cup shredded Cheddar cheese 1/3 cup shredded Monterey jack cheese
Directions: Combine the broccoli and water in a 2-quart microwave safe baking dish. Cook the broccoli on high heat for 10 minutes. Drain well.
Add the pearl onions and cream of mushroom soup to the broccoli. Mix well.
Sprinkle the top of the broccoli mixture with the cracker crumbs.
Place the broccoli in the microwave and cook on high heat for 7 minutes.
Evenly sprinkle the Cheddar and Monterey Jack cheeses over the crumbs. Microwave the broccoli casserole for 1 minute on high heat or until the cheese is melted.
Serve the broccoli casserole hot.
