
Beef Sirloin Tips

1/2 cup all-purpose flour
1 teaspoon salt
1/8 teaspoon black pepper
4 pounds beef sirloin tips
1/2 cup chopped onion
1/2 pound sliced fresh mushrooms
1 can (10.5 ounce size) condensed beef broth
1 teaspoon Worcestershire sauce
2 teaspoons tomato paste or ketchup
1/4 cup dry red wine or water
3 tablespoons all-purpose flour
Combine the first measure of flour, salt, and pepper in a large bowl. Mix well. Add the beef tips and toss the beef to thoroughly coat it in the flour mixture. Add the beef and any remaining flour in the bowl to the crock pot.
Add the onion and mushrooms.
In a bowl or large measuring cup, whisk together the beef broth, Worcestershire sauce, and tomato paste. Pour over the beef in the crock pot and mix well.
Cover the crock pot and cook on low for 4-6 hours or until the beef is tender.
Combine the wine and remaining flour and mix until smooth. Turn the crock pot to high heat. Stir the wine mixture into the liquid in the crock pot. Mix well. Cover the crock pot and cook until the gravy has thickened.
Serve hot over cooked noodles, pasta, rice, or mashed potatoes.
